Dom Pérignon recently introduced two vintage champagnes in a series of gastronomic soirées in a landmark event. These exclusive events, held at a private estate in the Hamptons and in Barcelona, paired the celebrated French champagne with the culinary mastery of Argentine chef Francis Mallmann and world-renowned chefs Albert Adrià and Niko Romito.

The Grand Unveiling

Dom Pérignon’s latest releases, the Dom Pérignon Vintage 2015 and the Vintage 2006 Plénitude 2 were the stars of these exceptional gatherings. Guests, including select wine experts, were treated to a solo tasting experience upon arrival at the Hamptons estate. Chef Mallmann, known for his unique 7-Fire cooking technique, crafted a menu to enhance these new champagnes’ intricate profiles. “Inspired by Dom Pérignon’s creations, I am delighted to take guests on a culinary journey where textures and flavours blend in surprising harmony,” Mallmann remarked.

A Symphony of Taste and Touch

Chef Mallmann’s culinary artistry highlighted the tactile quality of Dom Pérignon’s new vintages, emphasising the sensory experiences of touch and trace. “This collaboration allows us to celebrate the harmony of contrasting forces, inviting guests to savour the blend of exceptional culinary and champagne artistry against a stunning ocean backdrop,” explained Vincent Chaperon, Chef de Cave of Dom Pérignon.

An Epicurean Journey

The evening began with the Dom Pérignon Vintage 2015, noted for its assertive and structured profile. As the event progressed, guests were introduced to the Vintage 2006 Plénitude 2, which had matured for an additional seven years to reach its second plénitude. This vintage offered a rich, dense texture that added depth to each sip. Each course of the meal was meticulously paired to showcase the unique characteristics of the two vintages, revealing their multi-dimensional qualities.

The Essence of Luxury

Dom Pérignon is synonymous with luxury, and its reputation for quality and exclusivity makes it a symbol of sophistication. Unlike champagne houses that blend wines from different years for consistency, Dom Pérignon exclusively releases single-year vintages. These vintages are aged for at least eight years, capturing the essence of that year’s unique climate conditions. This approach is particularly significant in an era of climatic variability, where a good vintage is a cause for celebration.

A Toast to Vintage Excellence

The Dom Pérignon Vintage 2015 is a testament to a remarkable growing season, featuring a perfect balance of acidity and sugar. A mild winter, warm spring, and hot summer followed by timely August rains resulted in grapes of exceptional quality. This vintage, a blend of Chardonnay and Pinot Noir, was aged for nearly a decade to achieve its full complexity and elegance. It boasts notes of roasted cocoa, lime zest, toasted almonds, and brioche, culminating in a full-bodied yet delicate profile with peach, nectarine, and citrus flavours.

The Legacy of Plénitude

The concept of Plénitude at Dom Pérignon involves three distinct maturation phases. The first, P1, is released approximately eight years post-harvest. The second, P2, matures over 15 years, reaching a new level of quality that plateaus for many years. The third, P3, continues to evolve over 20-30 years. Initially branded as Oenothèque, these mature vintages were rebranded in 2014 as Plénitude. The Vintage 2006 Plénitude 2, with its evolved viscosity and texture, exemplifies this journey through time.

Celebrating with the Stars

Champagne enthusiasts and collectors alike covet Dom Pérignon’s vintages. Recently, David and Victoria Beckham celebrated their 25th wedding anniversary with a bottle of 1993 P3, a testament to the enduring allure of Dom Pérignon.

Dom Pérignon Plénitude 2 P2 Vintage 2006 Overview

The P2 concept at Dom Pérignon represents the second peak of maturity, taking approximately 15 years to develop. This vintage showcases a profound leap in quality, with a rich, dense texture and complex flavour profile. Available for pre-release delivery in October 2024, it promises an unparalleled champagne experience.
